Plum white bean salad with lemon-shallot dressing

  • 1 540g can cannelini beans, drained and rinsed
  • 1 450g jar roasted red peppers, drained and rinsed
  • 1 medium cucumber, cut into 1-inch chunks
  • 1/4 cup olive oil, divided
  • 1 tablespoon finely chopped shallot
  • 2 teaspoons honey
  • 1 teaspoon fresh lemon juice
  • 1/2 teaspoon salt, plus more to taste
  • 1/4 tablespoon freshly ground black pepper, plus more to taste
  • 5 small red plums, halved, pitted, and thinly sliced
  • 1/2 cup loosely packed basil leaves, torn

Instructions:

  1. Mix the kale, beans, peppers, cucumber, and 1 tablespoon of olive oil in a medium bowl.
