Ingredients:
- 1 bunch green curly kale
- 1 540g can cannelini beans, drained and rinsed
- 1 450g jar roasted red peppers, drained and rinsed
- 1 medium cucumber, cut into 1-inch chunks
- 1/4 cup olive oil, divided
- 1 tablespoon finely chopped shallot
- 2 teaspoons honey
- 1 teaspoon fresh lemon juice
- 1/2 teaspoon salt, plus more to taste
- 1/4 tablespoon freshly ground black pepper, plus more to taste
- 5 small red plums, halved, pitted, and thinly sliced
- 1/2 cup loosely packed basil leaves, torn
Instructions:
