Pita "pizza"

Enjoy a delicious twist on traditional pizza with our Pita "Pizza" salad recipe. Packed with fresh veggies, herbs, and savory flavors.

Ingredients:

  • 1 whole-wheat pita bread (6 1/2-inch)
  • 2 ½ teaspoons extra-virgin olive oil, divided
  • 1 small tomato, cored and sliced
  • 30g pearl mozzarella balls, sliced
  • 1 tablespoon chopped fresh basil
  • ½ tablespoon balsamic vinegar
  • 2 cups mixed baby salad greens

Instructions:

  1. Lay the pita bread on a toaster-oven pan lined with foil. Use a brush to coat it evenly with 1 teaspoon of oil. Place tomato slices and mozzarella cheese on top of the pita. Toast the pizza for 5 to 8 minutes, or until the cheese starts melting and the pita edges become toasted and slightly browned. Sprinkle some basil on top before cutting the pizza into wedges, if preferred.
  2. Drizzle the remaining 1 1/2 teaspoons of oil and vinegar on the greens and enjoy them with the pita pizza.
