Pita "pizza"
Enjoy a delicious twist on traditional pizza with our Pita "Pizza" salad recipe. Packed with fresh veggies, herbs, and savory flavors.
Ingredients:
- 1 whole-wheat pita bread (6 1/2-inch)
- 2 ½ teaspoons extra-virgin olive oil, divided
- 1 small tomato, cored and sliced
- 30g pearl mozzarella balls, sliced
- 1 tablespoon chopped fresh basil
- ½ tablespoon balsamic vinegar
- 2 cups mixed baby salad greens
Instructions:
- Lay the pita bread on a toaster-oven pan lined with foil. Use a brush to coat it evenly with 1 teaspoon of oil. Place tomato slices and mozzarella cheese on top of the pita. Toast the pizza for 5 to 8 minutes, or until the cheese starts melting and the pita edges become toasted and slightly browned. Sprinkle some basil on top before cutting the pizza into wedges, if preferred.
- Drizzle the remaining 1 1/2 teaspoons of oil and vinegar on the greens and enjoy them with the pita pizza.
