Pink & green salad

Ingredients:
- 1 cup Fresh Green Garbanzo
- 1 cup boiled tender peanuts (You'll need a lot of goobers to get 1 cup)
- 1 cup finely diced Persian cucumbers (or english hothouse)
- 12-15 Red globe grapes
- Juice of 1/2 a lime
- 1 pinch Ancho chile powder
- 1/3 -1/2 tablespoons Chaat Masala (Available in Indian Grocery stores)
- 10-12 leaves thai basil chut into a fine chiffonade + a couple of extra leaves for garnishing
Instructions:
- Cook the peanuts in their shells in well-salted water. Once cooked, take them out of the water, rinse with cold water to cool down, and shell them until you have 1 cup of beautiful pink cooked peanuts.
- Steam the young green chickpeas until they are just tender. Allow them to cool and then mix them with the peanuts.
- Cut the large globe grapes into quarters, deseed them, chop them up, and mix them with the legumes along with the cucumbers.
- Drizzle the lime juice, Ancho chili powder, chaat masala, and thinly sliced basil over the mixture. Toss everything together. Taste and adjust the seasoning, keeping in mind that the peanuts have already been salted. You may need to consider this when adding more salt via the chaat masala.
- Finish by decorating with a sprig of basil and serve.
