Pink grapefruit & avocado salad

Indulge in the vibrant blend of sweet pink grapefruit and creamy avocado in this refreshing salad bursting with fresh citrus flavors.

Ingredients:

  • 1 medium shallot, thinly sliced crosswise and separated into rings
  • 3 tablespoons fresh lime juice
  • 3 tablespoons extra-virgin olive oil
  • 1 tablespoon thinly sliced fresh mint
  • 1 tablespoon thinly sliced fresh basil
  • ½ teaspoon salt
  • 1 English cucumber, thinly sliced
  • 1 ripe avocado, halved, pitted and sliced crosswise

Instructions:

  1. Combine shallot rings and lime juice in a spacious bowl; allow it to sit until they become tender, approximately for 10 minutes. Mix in oil, mint, basil, and salt. Add cucumber; stir well. Allow the cucumber to soak in the dressing, stirring occasionally, until it softens, around 10 minutes.
  2. With a slotted spoon, place the cucumber on a serving platter; arrange avocado on top. Pour the dressing over the salad. Serve promptly.
