Pickled nectarine salad with burrata

Ingredients:
- nectarines, thinly sliced
- /4 cup white wine vinegar
- tsp sugar
- Kosher salt, freshly ground pepper
- cups mixed bitter greens (such as arugula and mizuna)
- cup fresh mint leaves
- tablespoons olive oil plus more for drizzling
- ounces burrata or fresh mozzarella, cut or torn into 1-inch pieces
Instructions:
- Mix nectarines, onion, vinegar, and sugar in a big bowl; add salt and pepper. Allow it to rest for 10 minutes.
- Remove excess liquid from the nectarines and onion, but keep it for later. Combine greens, mint, 2 tablespoons of oil, and 2–3 tablespoons of the saved liquid; mix well.
- Serve burrata on dishes, add the salad on top, and sprinkle with oil. Season with salt and pepper.
