Pickled nectarine salad with burrata

Ingredients:

  • nectarines, thinly sliced
  • /4 cup white wine vinegar
  • tsp sugar
  • Kosher salt, freshly ground pepper
  • cups mixed bitter greens (such as arugula and mizuna)
  • cup fresh mint leaves
  • tablespoons olive oil plus more for drizzling
  • ounces burrata or fresh mozzarella, cut or torn into 1-inch pieces

Instructions:

  1. Mix nectarines, onion, vinegar, and sugar in a big bowl; add salt and pepper. Allow it to rest for 10 minutes.
  2. Remove excess liquid from the nectarines and onion, but keep it for later. Combine greens, mint, 2 tablespoons of oil, and 2–3 tablespoons of the saved liquid; mix well.
  3. Serve burrata on dishes, add the salad on top, and sprinkle with oil. Season with salt and pepper.
