Pickled beet salad

Ingredients:

  • 910g beets, peeled and trimmed
  • 2 cloves garlic, crushed
  • 1 teaspoon ground white pepper
  • 3/4 cup olive oil
  • 1 cup cider vinegar
  • 2 teaspoon sea salt
  • 1/2 cup honey
  • 1 large vidalia onion, peeled and trimmed

Instructions:

  1. Cut the beets and onion into thin slices using a mandoline or food processor, and place them in a spacious bowl. Add the whole garlic to the beets and onion mix. In a moderate-sized bowl, blend the olive oil, vinegar, honey, salt, and white pepper and drizzle over the beets. Stir thoroughly, cover, and chill in the refrigerator overnight prior to serving.
