Pickled beet salad

Ingredients:
- 910g beets, peeled and trimmed
- 2 cloves garlic, crushed
- 1 teaspoon ground white pepper
- 3/4 cup olive oil
- 1 cup cider vinegar
- 2 teaspoon sea salt
- 1/2 cup honey
- 1 large vidalia onion, peeled and trimmed
Instructions:
- Cut the beets and onion into thin slices using a mandoline or food processor, and place them in a spacious bowl. Add the whole garlic to the beets and onion mix.
