Persimmon, grape, pomegranate & burrata salad
Discover a delectable blend of sweet persimmon, juicy grapes, vibrant pomegranate, and creamy burrata in this refreshing and flavorful salad.
Ingredients:
- 230g burrata cheese
- 2 Fuju persimmons, each cut into 8 slices
- 1 1/2 cups red and yellow cherry tomatoes, sliced in half
- 1 1/2 cups assorted grapes
- 1 cup pomegranate seeds
- 1 handful fresh mint, chopped
- 1 handful fresh basil, chopped
- 1/2 cup toasted pecans
- 2 tablespoons balamic vinegar
- 2 tablespoons olive oil
- kosher salt and pepper to taste
- 1 tablespoon honey
Instructions:
- Crack open the burrata using your hands and arrange it across the base of a serving dish.
- Arrange the sliced fruits over the burrata. Scatter with herbs and chopped pecans.
- Combine the vinegar in a small bowl and emulsify with the olive oil. Season with salt and pepper to your liking. Pour the dressing over the salad. Drizzle a spoonful of honey over the salad.
