Persimmon, grape, pomegranate & burrata salad

Discover a delectable blend of sweet persimmon, juicy grapes, vibrant pomegranate, and creamy burrata in this refreshing and flavorful salad.

Ingredients:

  • 230g burrata cheese
  • 2 Fuju persimmons, each cut into 8 slices
  • 1 1/2 cups red and yellow cherry tomatoes, sliced in half
  • 1 1/2 cups assorted grapes
  • 1 cup pomegranate seeds
  • 1 handful fresh mint, chopped
  • 1 handful fresh basil, chopped
  • 1/2 cup toasted pecans
  • 2 tablespoons balamic vinegar
  • 2 tablespoons olive oil
  • kosher salt and pepper to taste
  • 1 tablespoon honey

Instructions:

  1. Crack open the burrata using your hands and arrange it across the base of a serving dish.
  2. Arrange the sliced fruits over the burrata. Scatter with herbs and chopped pecans.
  3. Combine the vinegar in a small bowl and emulsify with the olive oil. Season with salt and pepper to your liking. Pour the dressing over the salad. Drizzle a spoonful of honey over the salad.
