Persian cucumber salad with red onion & thai basil

Ingredients:

  • 6 Persian cucumbers
  • 1 medium red onion
  • 4 tablespoons chopped Thai or sweet basil
  • 3 tablespoons toasted sesame seed oil
  • 2 1/2 tablespoons rice vinegar
  • 1 tablespoon honey
  • 1/2 teaspoon soy sauce
  • salt + pepper to taste

Instructions:

  1. Slice the onions thinly, then immerse them in water for 10-15 minutes to reduce their strong flavor.
  2. While waiting, cut the cucumbers into circular rings, then slice them into half-moon shapes or any other shape you prefer.
  3. Dice the basil leaves.
  4. For the dressing, mix together rice vinegar, soy sauce, salt, pepper, honey (use salt sparingly as there is sodium in the soy sauce).
  5. Gradually pour in the sesame oil while whisking continuously. This will help blend the dressing smoothly so it stays mixed.
  6. Combine the cucumbers, onions, basil, and dressing together before serving.
