Delight your taste buds with a refreshing Persian cucumber salad featuring crisp red onions and aromatic Thai basil. A culinary masterpiece of vibrant flavors!
Ingredients:
- 6 Persian cucumbers
- 1 medium red onion
- 4 tablespoons chopped Thai or sweet basil
- 3 tablespoons toasted sesame seed oil
- 2 1/2 tablespoons rice vinegar
- 1 tablespoon honey
- 1/2 teaspoon soy sauce
- salt + pepper to taste
Instructions:
- Slice the onions thinly, then immerse them in water for 10-15 minutes to reduce their strong flavor.
- While waiting, cut the cucumbers into circular rings, then slice them into half-moon shapes or any other shape you prefer.
- Dice the basil leaves.
- For the dressing, mix together rice vinegar, soy sauce, salt, pepper, honey (use salt sparingly as there is sodium in the soy sauce).
- Gradually pour in the sesame oil while whisking continuously. This will help blend the dressing smoothly so it stays mixed.
- Combine the cucumbers, onions, basil, and dressing together before serving.
