Perfect, quick wfh greek salad

Savor the flavors of Greece with this quick and refreshing salad - perfect for a delicious work-from-home lunch!

Ingredients:

  • 1/3 (Each) Red, Yellow and Orange Peppers
  • 1/2 Cucumber
  • 1 Super Ripe Tomato
  • 2 tablespoons High Quality Olive Oil (I like Colavita)
  • 2 tablespoons Red Wine Vinegar
  • 30g Feta Cheese (I like Presidente)
  • 1 teaspoon Oregano
  • 2 teaspoons Dried Italian Spices
  • 1/8 cup Red onion
  • 1/4 cup Pitted black olives
  • Kosher Salt + Fresh Ground Pepper to taste

Instructions:

  1. 1. Slice tomato into three thick slices, then proceed to cut each slice into eight small triangles.
  2. 2. Peel the cucumber partially and in alternate sections. Divide the cucumber into halves, then each half into quarters, and finally cut them into thick, crescent-shaped pieces.
  3. 3. Remove the seeds from the peppers. Proceed to slice each pepper into long, slender strips, then chop these strips into smaller, approximately one-inch pieces.
  4. 4. Thinly slice the red onion into one-inch pieces.
  5. 5. Cut the olives into three sections.
  6. 6. Combine all vegetables in a bowl, placing large chunks of Feta cheese on top.
  7. 7. Drizzle olive oil, vinegar, and spices over the vegetables and toss to combine.
  8. 8. Serve the salad immediately.
