Perfect kale salad

Ingredients:
- 180 grams fresh kale
- 1/3 cup pomegranate seeds
- 1 large avocado
- 2 sweet potatoes
- 1/2 cup walnuts
- 1 heaped tablespoon maple syrup
- 1 heaped tablespoon olive oil
- 2 tablespoons tahini
- 2 tablespoons olive oil
- juice 1/2 lemon
- juice 1/2 large orange
- 1/2 tablespoon tamari (add to taste)
- 1 tablespoon nutritional yeast (optional)
Instructions:
- Preheat the oven to 190 degrees Celsius. Begin by peeling the sweet potato and cutting them into small bite-sized cubes. Place them on a roasting tray, coat with olive oil, sprinkle a teaspoon of cinnamon, and bake in the oven for 30 minutes. While the sweet potatoes are cooking, rinse the kale and discard any tough stems. Combine all the ingredients for the dressing in a bowl (2 tablespoons tahini, 2 tablespoons olive oil, juice of half a lemon, juice of half a large orange, 1/2 tablespoon tamari, and nutritional yeast). Pour the dressing over the kale and gently massage for about 3 minutes until the kale starts to soften and wilt.In a separate bowl, mix the walnuts with pure maple syrup and olive oil until well combined. Add the walnut mixture to the tray with the sweet potato cubes and bake together for an additional 2-3 minutes before taking them out of the oven.
