Pepperoni potato salad

Ingredients:

  • 1810g baby Yukon gold potatoes
  • Kosher salt
  • 1 cup mayonnaise 
  • 3/4 cup marinara sauce 
  • 1/4 cup grated Parmesan cheese 
  • 8 scallions, green and white parts, chopped
  • 680g mozzarella pearls, drained
  • 200g pepperoni, quartered 
  • 2 cups pitted green olives, halved 
  • 1/2 cup fresh basil, cut into chiffonade 
  • 1/2 teaspoon freshly ground black pepper 
  • 1/2 cup fresh parsley, chopped

Instructions:

  1. Place the potatoes in a saucepan filled with cold water and mix in 2 tablespoons of salt. Cover the pot, bring it to a boil, and simmer until the potatoes are soft when pierced with a fork, around 10 to 15 minutes. Drain the water, halve the potatoes, and transfer them to a bowl.
  2. To create the sauce, combine the mayonnaise, marinara sauce, and Parmesan cheese. Pour the sauce over the potatoes, toss in the scallions, and mix well.
  3. Gently mix in the mozzarella pearls, pepperoni, olives, basil, pepper, and most of the chopped parsley. Sprinkle the remaining parsley on top for garnish.
