Pepperoni potato salad

Ingredients:
- 1810g baby Yukon gold potatoes
- Kosher salt
- 1 cup mayonnaise
- 3/4 cup marinara sauce
- 1/4 cup grated Parmesan cheese
- 8 scallions, green and white parts, chopped
- 680g mozzarella pearls, drained
- 200g pepperoni, quartered
- 2 cups pitted green olives, halved
- 1/2 cup fresh basil, cut into chiffonade
- 1/2 teaspoon freshly ground black pepper
- 1/2 cup fresh parsley, chopped
Instructions:
- Place the potatoes in a saucepan filled with cold water and mix in 2 tablespoons of salt. Cover the pot, bring it to a boil, and simmer until the potatoes are soft when pierced with a fork, around 10 to 15 minutes. Drain the water, halve the potatoes, and transfer them to a bowl.
- To create the sauce, combine the mayonnaise, marinara sauce, and Parmesan cheese. Pour the sauce over the potatoes, toss in the scallions, and mix well.
- Gently mix in the mozzarella pearls, pepperoni, olives, basil, pepper, and most of the chopped parsley. Sprinkle the remaining parsley on top for garnish.
