Pepperoni chicken

Indulge in the savory flavors of Pepperoni Chicken salad, featuring succulent chicken strips, spicy pepperoni slices, fresh veggies, and zesty dressing.

Ingredients:

  • 2 boneless, skinless chicken breasts
  • Kosher salt and freshly ground black pepper
  • 2 tablespoons butter 
  • 2 tablespoons olive oil 
  • 3 cups good marinara sauce 
  • One 3.5-ounce package pepperoni slices 
  • One 8-ounce ball mozzarella, cubed 
  • Minced fresh parsley, for serving
  • Salad or cooked pasta, for serving 

Instructions:

  1. Cut both chicken breasts into thinner cutlets by slicing them in half with a sharp knife. Season the cutlets with salt and pepper.
  2. In a heavy skillet over medium to medium-high heat, melt butter with olive oil. Cook the chicken until both sides have a nice color and are fully cooked, approximately 2 1/2 minutes per side. Transfer the cooked chicken to a plate.
  3. Add marinara sauce to the skillet and stir to warm it up. Place the chicken cutlets in the sauce, layer pepperoni slices on top of each cutlet, then add cubed mozzarella. Cover the skillet with a lid and cook until the cheese melts, about 2 to 3 minutes. Garnish with parsley.
  4. Enjoy right away with a side salad or over pasta. Spoon marinara sauce over the top before serving.
