Pepper and quinoa salad

Ingredients:

  • Kosher salt and freshly ground black pepper
  • 1 cup quinoa
  • 1 clove garlic
  • 2 red peppers, stemmed, seeded and thinly sliced
  • 1/2 cup fresh flat-leaf parsley, roughly chopped
  • 1/2 cup toasted pecans
  • 2 tablespoons extra-virgin olive oil
  • 1 tablespoon cider vinegar
  • 1/4 teaspoon ground cinnamon

Instructions:

  1. Heat up a big pot of salted water until it starts to boil.
  2. Boil the quinoa in the water until it becomes soft and starts to open up, for around 20 minutes; then, drain it and transfer it into a large bowl.
  3. Crush the garlic with a bit of kosher salt and mix it into the bowl with the quinoa. Include the peppers, parsley, pecans, oil, vinegar, cinnamon, and a few twists of black pepper. Stir everything together.
