Peasant salad
Delicious peasant salad recipe bursting with fresh flavors of ripe tomatoes, crisp cucumbers, and tangy feta cheese, drizzled with a zesty vinaigrette. Enjoy a tasty culinary experience with every bite!
Ingredients:
- 2 medium yellow potatoes, peeled and sliced 1/8-inch thick
- 2 slices bacon
- ¼ cup brewed black tea
- 3 tablespoons lemon juice
- 1 tablespoon canola oil
- 1 teaspoon red-wine vinegar
- ½ teaspoon salt
- Ground pepper to taste
- 1 head frisée or other chicory, torn
- 2 heads Belgian endive, cut on the diagonal into wide strips
- 1 large red or yellow tomato, seeded and diced
- 1 cup low-sodium chicken broth, or more to taste
- ½ cup chopped fresh parsley
- ¼ cup crumbled Roquefort or other blue cheese
Instructions:
- Put the potatoes in a medium-sized saucepan and add enough water to cover them by 1 inch. Bring it to a boil over high heat and cook until the potatoes are just soft, which usually takes about 8 to 10 minutes. After that, drain the water and move the potatoes to a big bowl.
- Fry the bacon in a small frying pan until it becomes crispy. Place them on a plate lined with paper towels to drain the excess grease. After, crumble the bacon over the potatoes.
- In a small bowl, mix together the tea, lemon juice, oil, and vinegar until they are well combined. Season the mixture with some salt and pepper. Pour this dressing over the potatoes and bacon, then mix everything gently to cover them. Add the frisée (or chicory), endive, tomato, croutons, parsley, and cheese to the bowl; mix everything thoroughly. Serve the dish right away.
