Peas and pasta salad

Discover a delightful combination of tender peas and al dente pasta in this scrumptious salad. Perfect for a light and flavorful meal.

Ingredients:

  • 450g cavatappi pasta
  • Kosher salt and freshly ground black pepper
  • 1/4 cup finely chopped red onion
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon Worcestershire sauce
  • 1 1/2 teaspoons sugar
  • 280g frozen peas, thawed
  • 1/2 cup shredded sharp Cheddar cheese
  • 6 slices bacon, cooked until crisp and crumbled

Instructions:

  1. Prepare the pasta according to the instructions on the package for al dente texture, usually around 8 minutes in boiling water with added salt. Once cooked, drain the pasta and transfer it to a spacious bowl filled with ice water to prevent further cooking. Gently mix until the pasta has cooled down, then drain it in a colander, making sure to shake off excess water. For the dressing, combine chopped red onion, salad dressing, apple cider vinegar, Worcestershire sauce, and sugar in a large bowl. Adjust the seasoning with a touch of salt and a couple of grinds of black pepper to taste. Add the cooked pasta, ensuring it is evenly coated with the dressing. Include the peas, cheese, and bacon. If preparing in advance, cover and refrigerate the salad until serving time, then sprinkle the bacon on top just before serving.
