Pear salad with honey vinaigrette

Ingredients:

  • 2 cups 1-inch cubes day-old multigrain bread
  • 1/4 cup plus 3 tablespoons olive oil
  • Salt and freshly ground black pepper
  • 1 cup toasted pecans, roughly chopped
  • 1 head butter lettuce, torn into bite-size pieces
  • 1 large pear, thinly sliced
  • 2 tablespoons honey
  • Juice of half a lemon

Instructions:

  1. Heat the oven to 180 °C. 
  2. Combine the bread cubes, 3 tablespoons of olive oil, salt, and pepper in a bowl. Spread them on a baking sheet and bake for 20 minutes. 
  3. Mix pecans, lettuce, pears, and croutons in a large bowl to make the salad. Combine the remaining 1/4 cup of olive oil, honey, lemon juice, salt, and pepper in a Mason jar, then shake well. 
  4. Drizzle the dressing over the salad and enjoy.
