Pear, pancetta, and walnut salad

Indulge in the delicious blend of sweet pears, crispy pancetta, and crunchy walnuts in this refreshing gourmet salad. Perfect for a burst of flavor! 🍐🥓🥗

Ingredients:

  • /4 teaspoon whole coriander seeds
  • tablespoon fresh lemon juice
  • /2 small shallot, minced
  • tablespoons extra-virgin olive oil
  • 1/60g thinly sliced pancetta, chopped
  • large head of butter lettuce, torn into bite-sized pieces (about 8 cups)
  • large red Anjou pear, unpeeled, quartered, cored, sliced
  • /4 cup coarsely chopped toasted walnuts

Instructions:

  1. Heat coriander seeds in a small skillet over medium heat until they become fragrant, which should take about 2 minutes. Then, grind them coarsely using a mortar and pestle. After that, transfer the ground coriander seeds to a small bowl. Add lemon juice and shallot to it. Slowly whisk in olive oil. Season the dressing with salt and pepper to your liking.
  2. In a heavy medium skillet over medium-high heat, cook pancetta until it turns crispy, usually around 4 minutes. Transfer the cooked pancetta to a plate lined with paper towels. Place lettuce in a large bowl. If needed, you can prepare the dressing, pancetta, and lettuce 2 hours beforehand. Keep the dressing and pancetta at room temperature, and cover the lettuce with a damp kitchen towel before refrigerating it.
  3. Mix the lettuce with the prepared dressing. Arrange pear slices on top, followed by walnuts and the crispy pancetta.
