Pear & arugula salad with candied walnuts

Ingredients:

  • 1 cup walnut halves
  • 4 teaspoons water
  • 2 tablespoons light brown sugar
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon salt
  • 1 large clove garlic, minced
  • ¼ teaspoon salt
  • 2 tablespoons walnut oil
  • 1 tablespoon Dijon mustard
  • 1 tablespoon white-wine vinegar
  • ¼ teaspoon ground pepper
  • 8 cups baby arugula
  • 2 firm ripe red pears, sliced

Instructions:

  1. Start by heating the oven to 200 °C. Take a small baking pan and cover it with parchment paper. Apply cooking spray on it.
  2. In a bowl, mix walnuts with water. Add brown sugar, cinnamon, and salt; mix well. Transfer this mixture onto the prepared pan. Bake until the sugar caramelizes and the nuts start to turn golden, for about 6 to 8 minutes. Let it cool in the pan until the sugar sets, approximately 10 minutes.
  3. For the salad, crush garlic and salt together in a mortar using a pestle or on a cutting board with the side of a knife until it forms a paste. Transfer it to a big bowl and combine it with oil, mustard, vinegar, and pepper. Toss in arugula, pears, and the prepared walnuts; mix everything well.
