Peanut lime salad

Indulge in the zesty blend of tangy lime and nutty peanut flavors in this refreshing salad that will tantalize your taste buds.

Ingredients:

  • 2 tbsp olive oil
  • 60g plain peanuts
  • 1 tsp black mustard seeds
  • 10 fresh curry leaves
  • 1 red onion, roughly chopped
  • 1 large potato, chopped into 1cm cubes
  • ½ tsp ground turmeric
  • 300g rice, cooked and cooled
  • 1 Ruby or Little Gem lettuce, roughly chopped
  • ½ cucumber, deseeded and roughly chopped
  • 50ml olive oil
  • 50ml lime juice
  • 1 tsp Dijon mustard

Instructions:

  1. Heat the oil in a frying pan over low heat and sauté the peanuts for about 5 minutes until they are roasted and turn golden brown. Then, toss in the mustard seeds and curry leaves and let them crackle for a few seconds.
  2. Next, combine the onions, potatoes, and 2 tablespoons of water in the pan. Cover it and let it cook for 10 minutes until the potatoes become tender. Take it off the heat, sprinkle with 1/2 teaspoon of salt and 1/4 teaspoon of freshly ground black pepper, and stir thoroughly. Allow it to cool down slightly, for approximately 30 minutes.
  3. Move the mixture to a large bowl and incorporate the rest of the ingredients.
  4. In a separate small bowl, combine the dressing components, drizzle it over the salad, mix well to ensure everything is coated, and then it is ready to be served.
