Peach caprese salad with balsamic cherries

Delight your taste buds with a refreshing peach caprese salad featuring the perfect blend of juicy peaches, creamy mozzarella, and tangy balsamic cherries.

Ingredients:

  • 1 cup cherries (about 22 cherries), pitted and cut into quarters
  • 2 tablespoons aged balsamic vinegar or balsamic reduction 
  • 1 tablespoon olive oil, plus more for drizzling 
  • 1 small shallot, minced 
  • Kosher salt and freshly ground black pepper
  • 5 peaches 
  • One 6-ounce log mozzarella 
  • 12 fresh basil leaves, cut into chiffonade strips

Instructions:

  1. Mix together the cherries, balsamic vinegar, olive oil, shallot, and a pinch of salt and pepper in a bowl. Refrigerate for 30 minutes.
  2. Halve the peaches, take out the pits, and slice them lengthwise. Cut the mozzarella into 1/2-inch thick slices.
  3. Arrange the peach slices and mozzarella on a dish in layers, alternating between the two. Top with the cherry relish, sprinkle with salt, drizzle with olive oil, and garnish with basil.
