Pea shoot salad with fava beans

Ingredients:
- 110g pea shoots (not to be confused with pea sprouts)
- 450g fava beans, shelled
- 4 radishes, thinly sliced
- 1/4 cup slivered almonds
- 1 avocado, halved and sliced lengthwise
- 3 tablespoons olive oil
- 1 tablespoon Balsamic vinegar
- salt + freshly ground pepper to taste
Instructions:
- Bring a small saucepan of water to a boil. Briefly blanch the fava beans for up to two minutes. Submerge them in a bowl of ice water. Once chilled, peel off the tough outer skin either by squeezing the bean gently with your fingers or using a small knife. Set aside.
- Combine the olive oil and Balsamic vinegar in a bowl, whisking until well mixed. Season with salt and pepper according to your preference.
- Mix the pea shoots, radishes, and sliced almonds with the prepared vinaigrette. Distribute the salad evenly among four plates. Garnish each serving with a quarter of the fava beans and a quarter of the avocado. Serve and savor the dish!
