Pea shoot salad with fava beans

Delight your taste buds with this vibrant pea shoot salad, featuring tender fava beans, tossed in a zesty dressing for a burst of flavor in every bite.

Ingredients:

  • 110g pea shoots (not to be confused with pea sprouts)
  • 450g fava beans, shelled
  • 4 radishes, thinly sliced
  • 1/4 cup slivered almonds
  • 1 avocado, halved and sliced lengthwise
  • 3 tablespoons olive oil
  • 1 tablespoon Balsamic vinegar
  • salt + freshly ground pepper to taste

Instructions:

  1. Bring a small saucepan of water to a boil. Briefly blanch the fava beans for up to two minutes. Submerge them in a bowl of ice water. Once chilled, peel off the tough outer skin either by squeezing the bean gently with your fingers or using a small knife. Set aside.
  2. Combine the olive oil and Balsamic vinegar in a bowl, whisking until well mixed. Season with salt and pepper according to your preference.
  3. Mix the pea shoots, radishes, and sliced almonds with the prepared vinaigrette. Distribute the salad evenly among four plates. Garnish each serving with a quarter of the fava beans and a quarter of the avocado. Serve and savor the dish!
