Pea shoot & romaine salad with lemon vinaigrette

Enjoy the bright flavors of fresh pea shoots and crisp romaine lettuce in this vibrant salad, dressed with a zesty lemon vinaigrette.

Ingredients:

  • 2 cups pea shoots
  • 6 cups romaine lettuce, chopped
  • 1/4 cup pumpkin seeds
  • 5 tablespoons olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon honey
  • 1 teaspoon Dijon mustard
  • salt & pepper to taste
  • 2 - 3 radishes, thinly sliced

Instructions:

  1. Mix pea shoots and romaine lettuce in a large salad bowl. Leave it aside.
  2. Heat a small cast iron or heavy-bottomed skillet over high heat. Once it's hot, lower the heat to medium. Add the pumpkin seeds and toast them by shaking the pan occasionally until they turn brown and release a pleasant aroma, usually for about 5 minutes. Take the seeds out of the pan and keep them aside.
  3. Combine olive oil, lemon juice, honey, mustard, salt, and pepper in a small bowl. Whisk until the ingredients are well combined. Pour this mixture over the salad and mix it well. Sprinkle the top with the toasted pumpkin seeds and radishes, then serve the dish immediately.
