Pea shoot & crispy ham salad
Delight in the refreshing flavors of pea shoots paired with the irresistible crunch of crispy ham in this delectable salad. Perfect balance of taste and texture.
Ingredients:
- 4 tablespoons extra-virgin olive oil, divided
- 110g diced ham (scant 1 cup)
- 1 tablespoon whole-grain mustard
- 5 tablespoons cider vinegar, divided
- 1 cup peas, fresh or frozen
- ¼ teaspoon ground pepper
- 1 tablespoon chopped fresh tarragon
- 4 cups baby arugula
- 3 cups pea shoots
- ½ cup toasted unsalted sunflower seeds
Instructions:
- Heat up 1 tablespoon of oil in a medium-sized frying pan over medium-low heat. Put in the ham and cook it, stirring every now and then, until it becomes crispy, which should take around 8 to 10 minutes. Once done, use a slotted spoon to move the ham onto a plate.
- Put mustard into the pan and scrape off any browned pieces. Mix in 4 tablespoons of vinegar and the other 3 tablespoons of oil. Toss in the peas and pepper; cook while stirring from time to time until the peas become soft, for about 3 to 4 minutes. Take it off the heat and let it cool down for 5 minutes. Add tarragon and the remaining 1 tablespoon of vinegar.
- In a big bowl, place arugula and pea shoots. Pour in the pea mixture and mix it all together nicely. Sprinkle the ham and sunflower seeds on top.
