Pea, feta, and crispy prosciutto salad

Delight your taste buds with this refreshing pea salad topped with tangy feta cheese and crispy prosciutto for the perfect combination of flavors and textures.

Ingredients:

  • 340g penne or other short pasta
  • ¼ cup olive oil
  • 110g prosciutto, torn
  • 4 cloves garlic, finely chopped
  • 140g baby spinach
  • ¾ teaspoon kosher salt
  • ½ teaspoon black pepper
  • ½ teaspoon lemon zest
  • 90g Parmesan cheese, grated (about ¾ cup)

Instructions:

  1. Prepare the pasta following the instructions on the package. Once cooked, drain the pasta and save a half cup of the pasta water.
  2. In a large skillet over medium heat, combine olive oil and prosciutto. Stir and cook until the prosciutto becomes crispy, approximately 4 minutes. Use tongs to transfer the prosciutto to a plate. Add garlic to the skillet and cook for half a minute. Then, mix in spinach, salt, pepper, and lemon zest. Cook and stir until the spinach wilts, which takes about 2 minutes.
  3. Combine the cooked pasta, reserved pasta water, and half of the cheese in the skillet. Stir and cook until the sauce thickens and evenly coats the pasta, usually around 1 minute. To finish, sprinkle the prosciutto and the rest of the cheese on top.
