Pasta salad with tuna, olives and parsley

Ingredients:
- Salt and pepper
- 450g curly pasta such as fusilli
- ½ cup olive oil
- ½ teaspoon grated lemon zest
- ¼ cup lemon juice
- 1 pint cherry tomatoes, halved
- 1 12-oz. can oil-packed chunk light tuna, drained, flaked
- ½ cup pitted black olives, chopped
- ½ small red onion, sliced
- ¼ cup chopped fresh parsley
Instructions:
- Start by boiling a pot of water with some salt. Put the pasta in and cook it until it's soft, which usually takes around 12 minutes based on the package instructions.
- Whisk together oil, lemon zest, lemon juice, and 1/2 tsp salt in a bowl. Once the pasta is cooked, drain it and mix it into the bowl with the dressing. Then, add the tomatoes, tuna, olives, onions, and parsley, and mix everything together. Allow it to cool down to room temperature, and if you like, season with salt and pepper before serving.
