Pasta salad on a stick

Delight in the delectable fusion of pasta and fresh veggies, all skewered for a fun and flavorful twist on a classic salad. Ideal for picnics or parties!

Ingredients:

  • One 9-ounce package cheese tortellini
  • 1 pint cherry tomatoes 
  • 110g sliced salami 
  • One 14-ounce can artichoke hearts, drained well, patted dry and cut in half 
  • 1/4 cup prepared Italian dressing 
  • 1/4 cup mayonnaise 

Instructions:

  1. Boil water in a pot and cook the tortellini following the instructions on the package, but drain them 1 to 2 minutes earlier than directed to maintain a firm texture. Let them cool down to room temperature before moving on.
  2. For the assembly, use a cherry tomato as the base to anchor the skewer. Then, thread on a tortellini, a folded salami slice, another tortellini, half an artichoke, tomato, tortellini, salami slice, and finish with a final tortellini. Repeat this process with the rest of the skewer components.
  3. Combine the Italian dressing and mayonnaise in a small bowl. Place the skewers on a platter, drizzle them with the dressing, and they are ready to be served.
