Pasta salad nicoise

Ingredients:
- Kosher salt and freshly ground black pepper
- 1/3 cup olive oil
- 2 tablespoons white wine vinegar
- 1 small shallot, minced
- 1 medium Yukon gold potato, cut into 1/2-inch pieces
- 3/4 cup trimmed, chopped green beans
- 230g dried penne rigate
- One 5-ounce can solid white tuna, preferably packed in olive oil, drained
- 1/4 cup thinly sliced celery
- 1/4 cup pitted nicoise olives, chopped
- 2 anchovy filets, finely chopped
- 2 medium vine-ripe tomatoes, chopped
Instructions:
- Start by boiling a large pot of water with some salt.
- Combine olive oil, vinegar, shallot, 1/2 teaspoon salt, and a dash of pepper in a spacious bowl.
- Boil the potatoes in the water until they are soft, which usually takes around 8 minutes. Use a slotted spoon to move them to a colander and rinse under cold water to halt the cooking. Then, add them to the bowl with the dressing. Boil the green beans in the water until they are cooked but still slightly firm, around 3 to 4 minutes. Again, transfer them to the colander, rinse under cold water, and add to the bowl.
- Cook the pasta in the boiling water following the instructions on the package. Drain and rinse with cold water to cool it down; then add it to the bowl.
- Mix tuna, celery, olives, anchovies, and tomatoes into the bowl and toss gently. Season with salt and pepper. For the best taste, serve the pasta salad immediately.
