Parmesan kale chips

Ingredients:
- 2 bunches kale, washed and dried well (preferably using a salad spinner)
- 3 tablespoons grapeseed oil
- 1 teaspoons kosher salt
- 1/4 cup finely-grated Parmesan cheese
Instructions:
- Preheat the oven to 160 °C. Position one oven rack in the upper-middle position and the other rack in the lower-middle position.
- Discard the ribs from the kale leaves and cut each leaf in half. Coat the kale with oil and salt in a large bowl until well mixed.
- Spread the kale evenly on 2 baking sheets, ensuring they form a single layer without overlapping. Sprinkle Parmesan cheese over the kale. Place the baking sheets on the designated oven racks and bake. Swap the sheets between the top and bottom racks halfway through baking. Bake until the kale reduces in size, approximately 20 minutes (it might not be completely crispy right away, but it will crisp up as it cools).
