Park deli potato salad

Ingredients:

  • 5-6 medium red potatoes
  • 1/2 sweet onion, grated
  • 1/3 cup water
  • 1/4 cup white vinegar
  • 1 teaspoon salt
  • 1 tablespoon sugar
  • 1 cup mayonnaise

Instructions:

  1. Place the potatoes in a large saucepan along with cold water and 1 teaspoon of salt.
  2. Bring the water to a boil and let it simmer until the potatoes are easily pierced with a fork, which usually takes around 30 minutes. Allow the potatoes to cool down before peeling them. Transfer the onion into a medium-sized mixing bowl. Combine water, vinegar, salt, and sugar in the bowl. Mix well.
  3. Cut the slightly warm potatoes into slices that are around ¼-inch thick. Transfer them into a spacious bowl. Pour the onion-vinegar mixture evenly over the warm potato slices.
  4. Allow the potato salad to rest for approximately 10 minutes so that the potatoes can soak up some of the mixture. There might still be some liquid in the bowl, which gives the salad its creamy texture. Add the mayonnaise and gently stir to avoid breaking the potatoes. Refrigerate for a minimum of 2 hours.
