Papaya and feta salad
Indulge in the delightful fusion of juicy papaya and rich feta with this refreshing salad. Tangy, sweet, and savory flavors await in every bite.
Ingredients:
- ¼ teaspoon freshly grated lime zest
- ¼ cup lime juice
- 2 tablespoons finely chopped palm sugar, or packed brown sugar (see Tip)
- 2 tablespoons fish sauce
- Hawaiian chiles, or any fresh hot chiles, minced, to taste
- 3 cups matchstick-cut or julienned green papaya, (see Tip)
- ½ cup very thinly sliced Maui or other sweet onion
- ½ cup pea shoots, cut into 3-inch pieces, or bean sprouts
- Freshly ground pepper, to taste
Instructions:
- Combine lime zest, lime juice, sugar, fish sauce and chiles by whisking them together in a spacious bowl.
- Mix papaya, onion, and pea shoots (or sprouts) with the vinaigrette; gently stir to blend. Just before serving, add a dash of pepper over the top.
