Papaya and feta salad

Indulge in the delightful fusion of juicy papaya and rich feta with this refreshing salad. Tangy, sweet, and savory flavors await in every bite.

Ingredients:

  • ¼ teaspoon freshly grated lime zest
  • ¼ cup lime juice
  • 2 tablespoons finely chopped palm sugar, or packed brown sugar (see Tip)
  • 2 tablespoons fish sauce
  • Hawaiian chiles, or any fresh hot chiles, minced, to taste
  • 3 cups matchstick-cut or julienned green papaya, (see Tip)
  • ½ cup very thinly sliced Maui or other sweet onion
  • ½ cup pea shoots, cut into 3-inch pieces, or bean sprouts
  • Freshly ground pepper, to taste

Instructions:

  1. Combine lime zest, lime juice, sugar, fish sauce and chiles by whisking them together in a spacious bowl.
  2. Mix papaya, onion, and pea shoots (or sprouts) with the vinaigrette; gently stir to blend. Just before serving, add a dash of pepper over the top.
