Panzanella bread and tomato salad
Delight in the Tuscan flavors of Panzanella salad. Crispy bread, ripe tomatoes, and fresh herbs combine in a burst of Mediterranean taste.
Ingredients:
- 2 large ripe tomatoes
- 1 red onion
- 3 stale bread slices
- 3 tablespoons olive oil
- 2 tablespoons white balsamic vinegar
- 2 cloves garlic
- salt, pepper
- 6 fresh basil leaves
Instructions:
- Start by rinsing and patting dry the tomatoes, then proceed to slice them and place in a bowl. Make sure to eliminate any tough parts and the stem.
- Skin and thinly cut the red onion. Mix it with the tomatoes.
- Prepare the salad dressing by blending 3 tablespoons of olive oil with 2 tablespoons of white balsamic vinegar. Skin and thinly slice or grate the garlic cloves, then add them to the oil and vinegar mixture. Season with salt and pepper according to your preference and stir thoroughly either with a fork or a whisk. Drizzle the dressing over the salad.
- Slice or tear the stale bread into pieces. Add them to the salad and mix thoroughly. Allow the salad to sit for approximately 5 minutes to allow the bread to absorb the flavors. Garnish with a few fresh basil leaves before serving.
