Paleo chicken salad sliders

Ingredients:
- 2 Chicken breasts
- 1 tablespoon Avocado oil (or cooking oil of your choice)
- 1 Pear, peeled and diced
- 1/4 cup Walnuts, crushed
- 1/4 cup Primal Kitchen paleo mayo
- 2 teaspoons Fresh squeezed lemon juice
- 1 teaspoon Dried dill
- Sea salt (to taste)
- 1 Sweet potato, washed and dried
- 1 tablespoon Avocado oil (or cooking oil of choice)
Instructions:
- Preheat the oven to 400F.Prepare two baking sheets by lining them with parchment paper or aluminum foil.Cut the sweet potato into 1 1/2-inch slices to use as the slider buns. Coat both sides with avocado oil and arrange them on one of the baking sheets. Bake for 30 minutes, remembering to flip them over halfway through the cooking time.While the chicken and sweet potato sliders are baking, start preparing the remaining ingredients for the salad mixture. Combine the rest of the chicken salad components in a bowl. Refrigerate the mixture until you are ready to serve.Once the chicken is cooked and has cooled down, dice it into small pieces. Mix the chicken into the salad mixture.Top the sweet potato sliders with the chicken salad for a deliciously sweet and crispy dish.
