Paleo chicken salad

Ingredients:

  • 3 cups shredded chicken, prepared
  • 2 pieces raw carrot
  • 2 pieces celery (stalks)
  • 2 tablespoons red onion
  • Salt and Pepper, to taste
  • 2 tablespoons cilantro
  • 3 tablespoons Mayo
  • 1 red pepper
  • 2 tablespoons green onion
  • 2 teaspoons lime juice

Instructions:

  1. Cut the chicken into small pieces, and put them in a medium-sized mixing bowl.
  2. Combine the chopped carrot, celery, bell pepper, red onion, and green onion in the bowl, and mix well.
  3. Mix in the mayonnaise, lime juice, and season with salt and pepper to taste. Stir until the mixture is uniformly creamy.
  4. Sprinkle the chopped cilantro on top, and gently mix.
  5. Enjoy right away or chill in the refrigerator before serving.
