Orzo salad

Ingredients:
- 4 cups chicken stock
- 1 1/2 cups dry orzo
- One 15-ounce can chickpeas, drained and rinsed
- 1 1/2 cups (about 25) grape tomatoes, halved
- 1/2 cup feta cheese, crumbled
- 1/2 cup pitted and halved kalamata olives
- 3 tablespoons red wine vinegar
- 3 tablespoons olive oil
- 1 small red onion, finely chopped
- Salt and freshly ground black pepper
- Handful of fresh mint, torn
Instructions:
- Place the broth in a big saucepan and heat it over medium heat, cover it and let it come to a boil. Next, add the orzo and cook it, stirring often, until it is slightly firm when bitten, which should take about 7 to 8 minutes. Strain the orzo using a colander and let it cool down completely.
- Combine the orzo, chickpeas, tomatoes, feta cheese, olives, vinegar, olive oil, onions, and season with salt and pepper in a large bowl. Add in the mint. Serve the dish at room temperature.
