Orzo salad

Delight your taste buds with this flavorful orzo salad bursting with fresh Mediterranean flavors. Perfect for a light and refreshing meal option!

Ingredients:

  • 4 cups chicken stock
  • 1 1/2 cups dry orzo 
  • One 15-ounce can chickpeas, drained and rinsed 
  • 1 1/2 cups (about 25) grape tomatoes, halved 
  • 1/2 cup feta cheese, crumbled 
  • 1/2 cup pitted and halved kalamata olives 
  • 3 tablespoons red wine vinegar 
  • 3 tablespoons olive oil 
  • 1 small red onion, finely chopped 
  • Salt and freshly ground black pepper
  • Handful of fresh mint, torn 

Instructions:

  1. Place the broth in a big saucepan and heat it over medium heat, cover it and let it come to a boil. Next, add the orzo and cook it, stirring often, until it is slightly firm when bitten, which should take about 7 to 8 minutes. Strain the orzo using a colander and let it cool down completely.
  2. Combine the orzo, chickpeas, tomatoes, feta cheese, olives, vinegar, olive oil, onions, and season with salt and pepper in a large bowl. Add in the mint. Serve the dish at room temperature.
