Orzo-cucumber salad

Delight in the refreshing crunch of cucumber and the wholesome taste of orzo in this vibrant salad bursting with Mediterranean flavors.

Ingredients:

  • 2 cups orzo (170g)
  • ½ English cucumber, chopped
  • 110g Feta, crumbled (1 cup)
  • 3 scallions, thinly sliced
  • ¼ cup chopped fresh flat-leaf parsley
  • 3 tablespoons fresh lemon juice
  • 3 tablespoons olive oil
  • kosher salt and black pepper

Instructions:

  1. Follow the instructions on the orzo package to cook it. Once done, drain the orzo and rinse it with cold water to cool it down. Shake the orzo well to get rid of any extra water.
  2. In a medium-sized bowl, mix together the orzo, cucumber, Feta cheese, scallions, parsley, lemon juice, oil, 1 teaspoon of salt, and ½ teaspoon of pepper. You can serve this dish either cold or at room temperature.
