Oriental chicken salad

Indulge in the exotic flavors of an Oriental chicken salad, a tantalizing fusion of savory grilled chicken, crisp vegetables, and zesty Asian dressing.

Ingredients:

  • 450g package of coleslaw with carrots OR 1 head of cabbage shredded
  • 1 seasoning packet from Top Ramen
  • 6 green onions, finely chopped
  • 1 cup cashews
  • 1 package of chicken flavor Top Ramen
  • 3 cooked chicken breasts, or rotisserie chicken shredded
  • 1/2 cup peanut oil or canola oil
  • 1/3 cup rice wine vinegar
  • 1 tablespoon low sodium soy sauce
  • 2 tablespoons sugar
  • 1 tablespoon Nigella Seeds* or toasted sesame seeds
  • seasoning packet from Top Ramen
  • Wonton strips as garnish

Instructions:

  1. Combine oil, vinegar, soy sauce, sugar, and seasoning packet in a small measuring cup.
  2. In a large bowl, mix cabbage, chicken, and nuts. Break apart RAMEN noodles and sprinkle them over the salad. Top with either Nigella seeds or 1 tablespoon of toasted sesame seeds. Pour the dressing over right before eating. Gently mix everything together. Decorate with wonton strips. Note: The dish may become soggy when stored as leftovers, but it will still be delicious.
