Orange, red onion and arugula salad

Delight in the zesty combination of sweet oranges, sharp red onion, and peppery arugula in this refreshing salad bursting with vibrant flavors.

Ingredients:

  • A small red onion, peeled and cut into 1/8th inch rounds
  • 1/4 cup orange juice
  • 2 tablespoons sherry wine vinegar
  • 2 tablespoons extra virgin olive oil
  • Salt and freshly ground black pepper
  • 3 seedless oranges
  • 2 large bunches washed and stemmed arugula

Instructions:

  1. Divide the rounds into rings and keep them immersed in chilled water until ready to serve.
  2. In a bowl, mix together the orange juice, vinegar, and olive oil; season with salt and pepper to your liking.
  3. Remove the skin and white part from the oranges and cut them into thin slices.
  4. Just before serving, arrange a layer of arugula leaves, place circular slices of oranges on top. Drain the onion rings, gently dry them, and sprinkle over the oranges; drizzle some of the dressing on top before serving.
