Orange, fennel & rocket salad

Tantalize your taste buds with the vibrant flavors of orange, crisp fennel, and peppery rocket in this refreshing and zesty salad.

Ingredients:

  • 1 fennel bulb
  • 2 large oranges
  • 1 small red onion, thinly sliced
  • 2 big handfuls rocket
  • 1 tbsp olive oil
  • 1 tbsp wholegrain mustard

Instructions:

  1. Slice the fennel thinly using a mandolin or a sharp knife.
  2. Peel the oranges with a knife and carefully separate the segments. Perform this step over a bowl to collect the juice for the dressing. Press out any remaining juice from the oranges once segmented.
  3. Put the onion in a bowl together with the fennel, orange segments, and rocket leaves.
  4. In a separate container, mix the orange juice with the olive oil and mustard to prepare the dressing. Pour the dressing over the salad before serving.
