Orange, fennel & rocket salad

Ingredients:
- 1 fennel bulb
- 2 large oranges
- 1 small red onion, thinly sliced
- 2 big handfuls rocket
- 1 tbsp olive oil
- 1 tbsp wholegrain mustard
Instructions:
- Slice the fennel thinly using a mandolin or a sharp knife.
- Peel the oranges with a knife and carefully separate the segments. Perform this step over a bowl to collect the juice for the dressing. Press out any remaining juice from the oranges once segmented.
- Put the onion in a bowl together with the fennel, orange segments, and rocket leaves.
- In a separate container, mix the orange juice with the olive oil and mustard to prepare the dressing. Pour the dressing over the salad before serving.
