Oma's potato salad

Experience the classic flavors of Oma's potato salad - a delightful blend of creamy potatoes, crisp veggies, and tangy dressing. Perfect for any occasion!

Ingredients:

  • 8 Medium potatoes
  • 6 Eggs
  • 5 Lemons, juiced
  • 1 bunch Fresh parsley, finely chopped
  • 1/2 Yellow onion, finely diced
  • Olive oil
  • Sea salt, to taste

Instructions:

  1. Extract juice from lemons and finely mince parsley, keep them aside.
  2. Finely chop onion, and mix with the lemon juice.
  3. Cook eggs in boiling water, then let them cool.
  4. Cook or steam potatoes in water with a pinch of salt, then let them cool down. I prefer to leave the skin on the potatoes, but if you prefer them peeled, you can do so while they are still warm, being careful not to burn yourself.
  5. Remove egg yolks from the whites. Chop the whites, and set them aside. Crush the yolks, mix in a bit of olive oil to form a paste, then combine with the lemon juice. Add parsley.
  6. Once the potatoes have cooled, chop them into pieces. Mix in the egg whites. Drizzle olive oil over the mixture, and stir. Pour the lemon juice-yolk sauce on top, and mix thoroughly. Enjoy!
