Oma's potato salad

Ingredients:
- 8 Medium potatoes
- 6 Eggs
- 5 Lemons, juiced
- 1 bunch Fresh parsley, finely chopped
- 1/2 Yellow onion, finely diced
- Olive oil
- Sea salt, to taste
Instructions:
- Extract juice from lemons and finely mince parsley, keep them aside.
- Finely chop onion, and mix with the lemon juice.
- Cook eggs in boiling water, then let them cool.
- Cook or steam potatoes in water with a pinch of salt, then let them cool down. I prefer to leave the skin on the potatoes, but if you prefer them peeled, you can do so while they are still warm, being careful not to burn yourself.
- Remove egg yolks from the whites. Chop the whites, and set them aside. Crush the yolks, mix in a bit of olive oil to form a paste, then combine with the lemon juice. Add parsley.
- Once the potatoes have cooled, chop them into pieces. Mix in the egg whites. Drizzle olive oil over the mixture, and stir. Pour the lemon juice-yolk sauce on top, and mix thoroughly. Enjoy!
