Delight in the classic flavors of this old-fashioned macaroni salad. This recipe is a delicious blend of tender pasta, crunchy vegetables, and a savory dressing. Perfect for a summer picnic or as a side dish for any meal.
Ingredients:
- 4 eggs
- 450g large elbow macaroni
- 110g ham steak, finely chopped
- 2 stalks chopped celery, including leaves
- 1 large shallot, chopped
- 2 tablespoons fresh lemon juice
- 2/3 cup mayonnaise
- 2 tablespoons Dijon mustard
- 1 (4-ounce) jar chopped pimentos, drained
- 3 tablespoons sweet pickled relish
- Kosher salt and pepper
Instructions:
- For preparing the hard-boiled eggs: Place the eggs into a medium saucepan and cover them with cold water. Bring the water to a boil over medium heat, then cover with a lid and turn off the heat. Allow the eggs to sit in the hot water for 14 minutes. After that, drain the water and cool the eggs under cold running water. Peel and chop the eggs, then set aside.
- While the eggs are being cooked, bring a large pot of salted water to a boil over high heat. Add the macaroni and cook until it reaches al dente. Drain the macaroni and rinse it with cold water.
- In a spacious serving bowl, mix together the chopped hard-boiled eggs, diced ham steak, celery, shallots, and lemon juice. Stir in the cooked macaroni and mix well.
- In a separate bowl, combine the mayonnaise, mustard, pickled relish, salt, and pepper. Whisk the ingredients together and adjust the seasoning according to your taste preferences. Pour the dressing over the macaroni mixture and toss until evenly coated. Adjust the seasoning with more salt and pepper if required. Cover the bowl and refrigerate for 2 hours to allow the flavors to blend.
