Okra seed couscous salad

Ingredients:

  • 48 grams cucumber slices
  • 3 grams fresh lemon balm, plus additional 8 to 10 small leaves for garnish
  • 215 grams okra seed "couscous" (see link in headnotes for method)
  • 70 grams feta
  • 40 grams Georgia olive oil
  • 1 gram sumac
  • 3 grams salt
  • 1/2 gram finely-ground black pepper

Instructions:

  1. Cut cucumber into thin slices using a mandolin.
  2. Finely chop the 3 grams of fresh lemon balm leaves.
  3. Mix together the lemon balm, crumbled feta cheese, and thinly sliced cucumber in a medium mixing bowl.
  4. Fry the okra couscous over medium heat in olive oil for 2 to 3 minutes or until it is warmed through.
  5. Add the cooked okra to the mixing bowl with the other ingredients and mix well.
  6. Flavor with sumac, salt, and black pepper.
  7. Present warm, decorated with the additional lemon balm leaves.
