Ode to my apple tree kale salad

Indulge in the perfect harmony of crisp apples and fresh kale leaves in this delightful salad. With a zesty dressing to elevate the flavors, this dish is a culinary ode to nature's bounty.

Ingredients:

  • 1/2 bunch Fresh Kale - I like dinosaur, but any variety is good
  • 1 tart yet sweet crispy apple, peeled and chopped into bite sized pieces
  • 1/3 cup shelled pistachio nuts
  • 1 small handful shaved Parmesan cheese, or another hard cheese of your choice
  • juice of 1/2 lemon
  • 2 tablespoons Olive oil or other good nut oil
  • 1/2 teaspoon honey
  • Kosher or sea salt and fresh ground pepper to taste

Instructions:

  1. Get the kale ready by washing the leaves and taking out the thick stem from the center of each leaf. Chop the leaves finely into thin strips. Put them in a salad bowl.
  2. Include the diced apples, the crushed pistachios, and the grated cheese with the kale.
  3. Blend the ingredients for the salad dressing until well combined, drizzle over the salad, and mix it well. Enjoy it as a main dish, or as a side with a soup and a piece of delicious bread.
