Ingredients:
- 3 garlic cloves
- 4 anchovies
- 40g Parmesan, divided
- 1 lemon
- 1 cup mayo
- 1 teaspoon low-sodium soy sauce
- 2 teaspoons Dijon mustard
- 450g boneless, skinless chicken thighs
- Few heads crisp lettuces (like Little Gem, romaine, or chicories)
- 2 tablespoons olive oil (optional, for croutons)
- 2 thick slices of crusty bread (optional, for croutons)
Instructions:
- Mince and crush the garlic cloves and anchovies until a grainy mixture is formed. Place in a medium-sized bowl. Grate ¾ cup of Parmesan cheese finely (approximately 1½ ounces) and add ½ cup to the bowl. Grate the zest of half a lemon into the same bowl. Mix in the mayonnaise, soy sauce, and Dijon mustard.
- Pour half of the prepared dressing into a flat container. Dry the chicken thighs with a paper towel, season with salt and pepper, then place them in the container and coat them evenly with the dressing.
- Warm a large nonstick skillet over medium heat. Add the chicken and cook until it turns golden brown and the juices run clear, for about 5 minutes per side. Move the chicken to a cutting board.
- Detach the leaves of the lettuce and combine them in a large bowl. Squeeze the juice of half a lemon (around 1½ tablespoons) over the greens, sprinkle some salt, and mix well. Include the rest of the dressing and the remaining ¼ cup of Parmesan cheese and mix thoroughly. Cut the chicken into thin slices. Add it to the salad and adjust the seasoning with salt, pepper, lemon, and Parmesan cheese as needed.
- (If desired) To make croutons, following step 2, warm some olive oil in the skillet over medium-high heat. Place slices of crusty bread in the skillet and toast them until they become golden brown, which should take about 2 to 3 minutes per side. Transfer the toasted bread to a cutting board, sprinkle with salt, and cut them into croutons. Sprinkle them over the salad.
