Ingredients:

  • 450g boneless, skinless chicken breast
  • 2 teaspoons paprika
  • 2 tablespoons olive oil
  • 2 teaspoons balsamic vinegar
  • 1/2 teaspoon salt
  • 1 garlic clove, smashed
  • 1/4 cup plain, whole-milk yogurt
  • 1 tablespoon olive oil
  • 1/2 lemon, juiced
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon ground cinnamon
  • 1/2 teaspoon ground turmeric
  • 1 teaspoon paprika
  • 1/4 teaspoon cayenne pepper (optional)
  • 1/4 teaspoon salt
  • 1 garlic clove, minced
  • 1/4 cup green olives, pitted and chopped
  • 1/4 cup dried apricots, chopped
  • 1/2 Granny Smith apple, cored and diced
  • 1/4 cup toasted walnuts, chopped
  • 2 tablespoons chopped fresh mint

Instructions:

  1. Mix the marinade components in a bowl. Coat the chicken with it completely. Allow it to marinate for a minimum of 3 hours.
  2. Preheat your grill or grill pan to medium heat and grill the chicken for approximately 5 minutes per side, or until it is thoroughly cooked. Take it off the grill and tear the chicken into small pieces using two forks.
  3. In a medium-sized bowl, blend the yogurt, olive oil, lemon juice, ginger, cinnamon, turmeric, paprika, cayenne (if preferred), salt, and garlic. Introduce the chicken, olives, dried apricots, apple, walnuts, and mint. Mix well. Season with salt and pepper, according to your preference.
