Nordic quinoa salad

Delight in the flavors of the Nordic with this wholesome quinoa salad. Packed with fresh ingredients and drizzled with a tangy dressing.

Ingredients:

  • 1/2 cup red quinoa
  • 3 1/2 cup kale
  • 3 1/2 cup red cabbage
  • 1 celery stalk
  • 3 dessert apples, such as cox
  • 1/2 cup walnut halves
  • 1 tablespoon dijon mustard
  • 1 tablespoon honey
  • 4 tablespoon apple cider vinegar
  • 2 tablespoon walnut oil
  • sea salt and freshly ground black pepper

Instructions:

  1. Boil the quinoa in abundant water for about 15 minutes or until tender, then strain and let it cool down before transferring it to a large salad bowl.
  2. Slice the kale into medium-thin strips, finely chop the cabbage and celery, and cut the apples into slices. Dry roast the walnut halves in a pan for a couple of minutes, then roughly chop them. Let them cool down.
  3. Combine all the salad components in the salad bowl (it's most effective to use your hands for this step).
  4. For the dressing, blend the mustard, honey, and vinegar by whisking them together, then gradually whisk in the oil and season with salt and pepper. Toss the salad with the dressing right before serving.
