Noodle salad

Ingredients:
- 1 1/2 tablespoons honey
- 1 tablespoon Dijon mustard
- 1 tablespoon Greek yogurt
- 2 teaspoons apple cider vinegar
- 3 large carrots, peeled

- 1 English cucumber, peeled
- 1 red pepper, seeded and julienned
- 170g sweet potato starch noodles, cooked according to package directions and rinsed
- 1/2 cup dried cranberries
Instructions:
- Combine honey, Dijon mustard, Greek yogurt, and cider vinegar in a large bowl. Spiralize the carrots and mix with the dressing, add salt, and mix well
- Use a peeler to create cucumber ribbons, stopping at the seeds. Pat the ribbons dry with a clean towel. Add the ribbons to the bowl with carrots, red pepper, noodles, and cranberries. Mix thoroughly with the dressing and serve.
