Noodle salad

Ingredients:

  • 1 1/2 tablespoons honey
  • 1 tablespoon Dijon mustard 
  • 1 tablespoon Greek yogurt 
  • 2 teaspoons apple cider vinegar 
  • 3 large carrots, peeled 
  • 1/2 teaspoon kosher salt 
  • 1 English cucumber, peeled 
  • 1 red pepper, seeded and julienned 
  • 170g sweet potato starch noodles, cooked according to package directions and rinsed
  • 1/2 cup dried cranberries 

Instructions:

  1. Combine honey, Dijon mustard, Greek yogurt, and cider vinegar in a large bowl. Spiralize the carrots and mix with the dressing, add salt, and mix well
  2. Use a peeler to create cucumber ribbons, stopping at the seeds. Pat the ribbons dry with a clean towel. Add the ribbons to the bowl with carrots, red pepper, noodles, and cranberries. Mix thoroughly with the dressing and serve.
