Nonna's piadina
Enjoy the traditional flavors of Nonna's piadina, a delightful Italian flatbread salad bursting with fresh ingredients and savory tastes.
Ingredients:
- 3 cups all-purpose flour
- 1 teaspoon salt
- 2 1/4 teaspoons baking powder
- 3 heaping tablespoons shortening or leaf lard
- 3/4 cup warm water
- 1/4 cup warm milk
- 1 handful Fillings of your choice like Prosciutto, ham, mozzarella, fritatta, salad, Nutella, pretty much anything you want
Instructions:
- Start by placing flour on a pastry board or countertop. Sprinkle salt and baking powder, then mix them well by using your fingers.
- Create a hollow in the middle of the mixture. Add the shortening and blend it with the flour using your fingertips. It's alright if there are lumps, and the mixture will still appear quite powdery.
- Make another hollow and pour in the water and milk. Combine the ingredients using your fingers until a dough forms. Adjust by adding a small amount of warm water or flour if necessary. The goal is to achieve a soft dough that is not sticky at all. Knead for a couple of minutes and shape it into a log. Alternatively, you can mix everything in a large bowl, using a fork for better mixing.
- Separate the dough into 6 equal parts, making use of a scale if available. Using one hand, gently roll each part into a ball on the board or counter. Use your thumb to push the dough ball underneath with each rotation, as recommended by mom. Place each ball aside on a dusting of flour and allow them to rest for 5 minutes.
- Preheat a griddle to medium heat. Gently flatten a dough ball and roll it out to approximately a 9-inch diameter. Carefully transfer it onto the heated griddle, then prick the piadina all over using a fork. If air bubbles form, promptly puncture them with the fork. Cook each side for a few minutes or until lightly browned spots appear. Transfer to a clean dish cloth. Repeat this process with each dough ball, stacking the cooked piadinas on top of one another. Cover loosely with a dish towel. Once done, cut the piadina into quarters and serve with your preferred sandwich fillings.
- Piadina can be frozen successfully. Reheat it on a griddle over low heat or wrap it in damp paper towels and microwave it.
