Nic's caesar salad dressing

Indulge in the irresistible blend of Parmesan, garlic, and anchovies with Nic's zesty Caesar salad dressing. Elevate your greens with a burst of flavor!

Ingredients:

  • 1 large egg, blanced
  • 4-5 anchovy filets
  • 3 tablespoons fresh lemon juice
  • 1/3 cup extra-virgin oilve oil
  • 2-3 garlic cloves, minced
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon Worcestershire sauce
  • 1/2 teaspoon freshly ground pepper
  • 1/2 teaspoon kosher salt
  • 1-3 dashes Tabasco sauce (to taste)

Instructions:

  1. Combine egg, Worcestershire sauce, anchovies, lemon juice, garlic, salt, pepper, mustard, and Tabasco sauce in a food processor and blitz until mixed. Gradually pour in olive oil.
  2. The dressing will begin to thicken. Taste and adjust seasoning according to taste. If needed, drizzle in a bit more lemon juice (or red wine vinegar) to lighten the consistency.
  3. Mix the dressing with shredded romaine lettuce, ensuring it is evenly coated. This step is most effective when done by hand. Integrate some grated cheese and croutons into the salad. Garnish with extra grated cheese, croutons (and, if desired, any remaining anchovy fillets) before serving.
