New potato salad with cucumber & jalapeño

Delicious potato salad with refreshing cucumber and spicy jalapeño for a flavorful twist on a classic dish. Perfect for summer gatherings!

Ingredients:

  • 2 medium cucumbers, or 1 large English cucumber
  • ¼ cup rice vinegar
  • 1 teaspoon sugar
  • ¼ teaspoon salt
  • 2 tablespoons sesame seeds, toasted (see Tip)

Instructions:

  1. Remove the skin from the cucumbers, leaving some green stripes. Cut the cucumbers lengthwise, scoop out the seeds using a spoon. Use a sharp knife or a wide vegetable peeler to slice thinly. Put the slices in two layers of paper towels, gently press to get rid of excess water.
  2. Mix vinegar, sugar, and salt in a medium bowl until the sugar and salt dissolve. Add the cucumbers and sesame seeds; mix thoroughly. Ready to be served right away.
