  • 1360g new potatoes, cooked
  • 4 eggs, hard-boiled and sliced
  • 3 tablespoons coarse-grain mustard
  • 1 red onion
  • 4 tomatoes, peeled, seeded, diced
  • 1/4 cup chopped celery
  • 1 tablespoon chili powder
  • 1/2 cup olive oil
  • 3 ears corn, roasted and shucked
  • 1 poblano chili, minced

Instructions:

  1. Combine all ingredients in a big bowl. Add salt and freshly ground pepper to taste. Decorate with finely chopped parsley if preferred.
